The Big Detox Salad

Sometimes you need a powerful salad.

One that’s full of superfoods, that’ll make you glow from the inside out. This is one of those salads.

It starts with massaged kale (of course!) Massaging lemon juice and olive oil into your kale turns it tender and delicious. My favourite super green!

Detox essentials

Then, throw in flavourful superfoods. I added sliced avocado for healthy fats, grapefruit segments for a tangy-sweet bite and vitamin C, spicy roasted chickpeas for protein, crunchy purple cabbage, and roasted broccoli.

I toss it all together with a tangy grapefruit vinaigrette.

Ingredients

1 bunch kale, stems removed, roughly chopped
4 tbsp olive oil
1 lemon
salt
1 head broccoli, cut into florets
1 can chickpeas, rinsed (or 2 cups cooked chickpeas)
2 tsp paprika
3 tsp red chili flakes
2 tsp garlic powder
salt and pepper
1 grapefruit
1 avocado, sliced
1 cup sliced purple cabbage

Crispy roasted broccoli

Directions

Drizzle kale with 1 tbsp olive oil, juice of half the lemon, and a sprinkle of salt. Massage into the kale until the leaves become tender and bright green, a couple of minutes. Set aside.

Preheat oven to 350 and line a few baking sheets with parchment paper. Toss broccoli florets with 1 tbsp olive oil, 1 tsp chili flakes, and salt and pepper. Roast until edges are getting crispy, about 15 minutes.

Dry chickpeas well in a kitchen towel or between paper towels. When the broccoli is finished roasting, transfer it to a plate and pour chickpeas onto the baking sheet. Drizzle with 1 tbsp of the olive oil, 2 tsp chili flakes, and garlic powder and paprika. Season with salt and pepper. Roast about 45 minutes, tossing every 15 minutes.

Using a sharp knife, remove the peel and pith from the grapefruit. Slice into segments over a bowl, to make sure you catch all the juice.

Measure 1/4 cup of grapefruit juice and whisk it together with remaining 1 tbsp of olive oil, juice from the other half of the lemon, and salt and pepper.

Toss kale with red cabbage, and top with sliced avocado, grapefruit segments, broccoli, and roasted chickpeas. Toss in grapefruit dressing.
