Ok, I have a new favourite snack.
I can’t really decide what meal this is, but I love it.
Since it’s rhubarb season, I decided to celebrate by making a delicious strawberry rhubarb sauce, and then swirl that into my yogurt.
It’s easy, healthy, and the sauce lasts all week, so you can eat it for days.
So which is it, dessert, breakfast, or snack? You decide!
One bunch rhubarb
1 cup strawberries (I used frozen sliced strawberries, because they aren’t in season right now)
3 tbsp sugar
2 tbsp water
plain greek yogurt
Chop rhubarb and throw into a saucepan with sugar and water. Bring to a boil, then simmer, covered, about 30 minutes. Remove lid and simmer until liquid mostly boils off. Add strawberries, and cook about 5 more minutes.
Sweeten yogurt with your preferred amount of honey, and then swirl in rhubarb sauce.
