Chia pudding is everywhere right now. But it actually took me awhile to get on this bandwagon.
I’ve tired it a few times and it just wasn’t for me. I couldn’t get on board with the texture. Just not my jam.
But this chia pudding is blended! Which makes it smooth and creamy, exactly what you want in a pudding.
It’s flavoured with chocolate and peanut butter, and lightly sweetened with maple syrup. Layered with peanut
butter banana, this feels like dessert, but is healthy enough for breakfast!
Vegan, healthy, creamy chia pudding? I can totally get behind this.
Makes 2-4 servings
2 cups unsweetened nondairy milk
1/2 cup chia seeds
1/4 cup peanut butter
1/4 cup cocoa powder
2 tbsp maple syrup
1/2 tsp vanilla extract
1 ripe banana, mashed
1 tbsp peanut butter
toppings: granola, sliced fruit, chocolate chips, cinnamon, etc.
Whisk together milk, chia seeds, peanut butter, cocoa powder, maple syrup, and vanilla. Cover bowl with plastic wrap and chill overnight.
Scrape into a blender and blend until smooth. Add more milk if you want it a bit thinner.
Meanwhile, mash banana and stir in peanut butter.
Layer chocolate pudding with peanut butter-banana and top with your choice of fixins.
Hooray for chia seeds!
